PERFECTION OF WINEMAKING
Relentless improvement has been part of our winery from her very foundation and continues to this day. Modern day technology, with stainless steel insulated tanks, pneumatic presses, gentle movement pumps and overall temperature control system shares the room with oak vats, barriques and traditional clay vessels – Kvevri, buried in the earthen floor of the great cellar.

Freshly picked grapes are received in our processing room, which is linked to the wine filtration and stabilization area in the east of the winery. The western part contains cellar itself, with white wine settling and fermentation, barrique and storage areas. Outside, just in front of the great cellar sit the fermentation tanks for red wine, as well as tanks for skin maceration. All are used as a storage tanks in winter months, for wine stabilization in natures embrace. To the east of the “big cellar” are our bottling and refrigeration rooms with insulated tanks for low temperature storage during the long summers. Our latest infrastructure project is nearing completion, and construction of a new two-story wine cellar has been finished.

This building will hold our reception area, more room for oak barriques, where red and white wine will matures in constant temperature and humidity. Only the underground part is functional at this stage. In front of entire modern production facilities one will find our old historic cellar, estate where our offices are located, a small plot of vineyard and evergreen garden for one to stroll and soak in all that is the Alazani Valley.

The Noble Wines
SATAVADO is the brand name of different wines. The brand is the successor of Georgian ancient wine making technology, called Gravitational principle of winemaking, which as far back as in XI-XII centuries, period of Renaissance in Georgia, was used by our ancestors in Ikalto Academy, where different disciplines such as theology, science and philosophy were taught alongside with blacksmith’s work, ceramics, Viticulture and Viniculture. The historic wine cellar on the territory of the academy, with three winepresses and remains of eleven pitchers buried in the ground, proves these facts and is the monument of noble winemaking technology.

It is said that during the reign of Queen Tamar, lifetime legend of her epoch, so called Hall or parliament of the lords of that time, before ratification of royal orders, strengthened its own decisions with a glass of wine, and the toast said with the wine, made by noble winemaking technology, was as strong as the law. There is belief that Georgian table tradition, with its characteristic hierarchy, comes from this epoch. Brand SATAVADO, a set of different wines, started at this epoch, which is based on vast knowledge and experience of our ancestors.

These facts lead us to Ikalto – a small village in Kakheti region, where Ikalto Academy was founded and where different disciplines such as theology, science and philosophy were taught alongside with blacksmith’s work, ceramics, Viticulture and Viniculture.
